Apple and Olive Salad

Hi Everyone

Since past few weeks we have been following a high protein diet regime and have been consuming more meat at home. Sunday evening was a dinner with friends at an American Diner called "Miss Pepper"(was such a lovely place) and it of course meant so much more meat. I really wanted to take a break from this and that was enough of a reason for me to make an Apple Salad today adopted from a recipe by Chef Kunal Kapur. I relished this salad for lunch today and would love sharing my take on this recipe.





What you need for this salad:

- Apples (Red/Golden/any other that you prefer)
- Apple Balsamic Vinegar
- Sugar (White or Brown)
- Mixed nuts (Almonds/Cashews/Walnuts)
- Pickled Green & Black Olives
- Olive Oil
- Lemon Juice
- Garam Masala
- Chat Masala
- Black Pepper & Salt
- Cottage Cheese 
- Basil (Fresh or Dried)

How to make it:

- Slight cook sliced apples in a pan with about 1-2 tablespoons of sugar an 2-3 tablespoons of Apple Balsamic vinegar on medium heat. This should take around 6-7 minutes till the apples absorb the sugar and vinegar. Let it cool for a while. 
- For the dressing: In a bowl add 2  tablespoons of Apple Balsamic Vinegar, few drops of Olive Oil, Sea Salt, Black Pepper, pinch of Garam Masala and Chat Masala and give this a good mix. At this stage you can add fresh Basil Leaves but I chose to add the sun-dried ones later.
- Pour the dressing over the Apples. Top with some Cottage Cheese, Crushed mix of nuts, halved Olives and Basil.
- I served this salad with a side of crisp french baguette topped with some Feta Cheese spread and a cup of Rooibos Tea.
