Upside Down Pineapple and Ginger Cake

Hi Everyone !!

I am fan of Pineapple for its taste, texture and fragrance. It screams summers to me and I bought a whole big Pineapple (greed took over me ;) ) in the weekly market of our village. So thought of baking this 'Upside down Pineapple & Ginger cake'. However, this time around I replaced part of all-purpose flour with my favourite Oats and added a hint of thinly sliced ginger to it.

What you need to make this cake:

- 4-5 Slices of Fresh Pineapple or use Canned if fresh is not available
- Couple of Cherries (fresh or canned)
- Thinly sliced Ginger/ Ginger Powder
- 1 cup of all purpose flour + 1 cup of Oats
- Pinch of Salt
- 1 tbsp of Baking Powder
- 3 tbsp of unsalted butter
- 1/2 cup of Sugar
- 1 Egg
- 1/3 cup of whole milk

How to Make it:

- Prepare the oven by pre-heating it to 175 degrees Celsius and the baking tray with non-sticking cooking spray.
- Put 1 Tbsp of Butter in the tray and let it quickly melt by keeping it on oven for  a minute or so. Take this tray out of the oven and sprinkle some brown sugar for a caramelised layer (I was out of brown sugar so skipped this step) and then place Pineapple slices and Cherries around and in between (as & how you like)
 - For the batter: Whisk together 2 Tbsp of Butter and Sugar. Now add milk and egg to it and mix it to a smooth texture. Next, add your oats (roasted and ground) and all purpose flour along with baking powder, salt and ginger (slices or powder). Mix it well and pour in the baking tray over the pineapples. Spread it out gently to make sure of even thickness everywhere.
- Bake this is in this oven for 40 minutes. Cook for a further few minutes until center comes out clean.
- After taking this out let it sit for no more than 5 minutes (so that caramel doesn't get hard as then everything will stick to the pan) and then place a large plate over the tray and invert the cake.
- I suggest that you wait for about an hour before serving this cake since its quite moist.

I have totally relished this cake with my tea this morning while I write this Post. Hopefully you guys will try this soon and share your experience.
